    In your tutorial "The Perfect Server - Ubuntu 9.10 [ISPConfig 3]" I
    > used the hostname "**" with my actual IP address

    You can change the hostname in /etc/hostname and in /etc/hosts. You might also have to change it in /etc/postfix/ Reboot the system afterwards.
