If you follow the ISPConfig Perfect Server Tutorial, you have set up an e-mail server.
To make it work properly, you also have to make DNS name service entries for the e-mail server.

To use this Tutorial successfully for a properly working e-mail server
    you need
    - a host where you install ISPConfig (and an Operating System)
    - I recommend 2 GB memory with 4 GB swap, should be enough for mail server.
    - host has a fixed IP-address
    - host must have Internet connection with port 25 open both ways
    - you must get host reverce DNS name service PTR record that matches hosts FQDN
    - host must have A record for its IP-address (or AAAA if using IPv6)
    - you must create MX record to DNS name service for the host

Thanks for this. Unfortunately I missed out the setting up a mail server part. I get all of your points above but the question is, what specific steps do I need to take to set up a mail server and have ispconfig recognise it on a working ispconfig install?

Install the missing mail part from perfect server setup, then do an ispconfig update, choose reconfigure services = yes during update and choose to configure the mail system when the updater asks.

    Thanks Till,
I've ended up moving myself forward onto Buster, any differences between that and the perfect server tutorial for Deb Stretch? Thanks :)

Sure, the perfect server tutorial for each major Debian release is different. See Debian Buster guide :)
