The access log can not be disabled for a single site.

Is there a way to reduce the registration of the data?
Everyday the files become very big.

No. The only thing that you can do is disable logging for the complete apache server.

You could manually edit the apache config file for that particular vhost and send access logs to /dev/null .... but this change would be removed each time you created or edited a site using ispconfig

Alternatively delete the access log file, and create a symlink to /dev/null in its place.
