    I am trying to understand what this service is exactly.

    The VMware image is a zipped file that if extracted on a server will work as if I had made the installation myself, step by step as described in the tutorial?

    The VMware Server is some kind of simulator (like Xampp), so I can turn my local pc into a server that can also run the VMware images?

    Partly correct!

    But: Xampp isn't simulate an Server , it is a full capable Webserver with Apache, MySQL, PHP and Perl running on Windows Operating System while VMWare is an Virtual Machine which also runs not directly under the PC OS, it uses an separately installed OS which could be Windows, OS-X or whatsoever! Same applies for Virtual Box from Oracle. VMWare also has the ability that you could install in that same environment different OS's at the same time and also run simultan together.

    Personally I don't like VMWare!
