Default Moving email hosting - DNS records.

Hi, I will need move email hosting for one domain. It has lot of email boxes.

My question is:
Can I move mailboxes one by one for some time?

Can I have MX records on two diffrent servers, so income mail will first ask the first server if there is the mail box and if not (allready moved box) then will deliver to second server?
