Default Virtual Hosting with Postfix, part two Question

I don't really understand what dovecot does that Postfix can't do. Can somebody explain?

Can i just Postfix as my main MTA?

Dovecot is a POP3/IMAP server, Postfix is an SMTP server. You need dovecot to log in with your email client and fetch emails. This cannot be done with Postfix.
