Default ISPConfig Necessary?

Hi!
I'm sick of trying to make my server work, either mail work or web work, but never together haha, nevermind.
My question is. I'm hosting only ONE website, which is mine, Do i really need ISPConfig? Can I do everything without it?
My biggest concern is about mails, as I'm hosting my own DNS, can i host them without ISPConfig 2? Also, how would i be able to create mail acoounts?
Thanks for everything
