Default HowTo setup a HA Fileserver connect to a iSCSI Target

We recently purchased a Dell EqualLogic iSCSI SAN.

Our application consists of a number of servers running as cluster. All these servers need access to data located on the same LUN on our SAN.

Data are uploaded by users through the application and all servers must be able to write and read this data.

We are considering running two physical servers in an active / passive setup, which then provides access to data is through NFS.

What is your opinion and how do we solve this?
How would you accomplish this task?
