Default Apostrophe causes mySQL error

I just ran a test with the exact same mySQL database and php code on two different servers. The cPanel server worked fine, but the server running ISPConfig 3 causes a mySQL error when a field has an apostrophe in it when I try to save. Is this some PHP setting I missed?

Thanks!
