Default securing php?

Hello,
I'm configurating a server with isp ang I have a problem.
Recently friend who is testing it sent me whole /etc/passwd without heaving a shell account. He done it only with php open functions, so my question is HOW to close each site in it's directory /var/www/webXX ... I has tried to find out something with G but nothing special.

Can anybody post me a link or a howto

thank's a lot
