repartition a dedicated server after OS installation?

Hi!

I'm getting a debian dedicated server, but it comes with default partitions. I want to know if there are people here with experience on partitioning remotely through ssh. I need the /var partition to be the biggest one.
Are there some tutorials out there for partitioning a system in this way?
