ok. The problem is now fixed.
My hunch was right. The main domain I was testing with has a corrupt MX record with my Nameparking service 123-reg.co.uk

Has this ever happened to anyone else?
and if I install ISP config do I run my own nameservers and DNS so this problem will never happen again??

And yes...the mx record is set correctly with a full stop at the end.
