Default switch from dovecot to courier - possible?

I am running a ISPConfig3 v. 3.0.4.6 on Debian 6 with Apache and BIND (plus dovecot), installed using Falko's perfect server how-to.

Now I have the problem that dovecot makes it difficult to manipulate autoresponder messages by script, so I want to switch the mailserver to courier.

Is this possible on a running server? is this as easy as removing dovecot packages and installing courier or will this break ISPC3 functionality?

I also have squirrelmail installed, but I guess that one will be easy to rewire onto courier by simply reconfiguring it. correct?
