Default Server Migration

Hello,
I have a dedicated server and i will change the provider for the same price and a very better service.
It's possible to :
-Migrate and conserve old mails and receive new mails
-Conserve all clients data hosted with ISPC (Clients/website/data/mails/emails...)
I have some idea to how to proceed :
-Change my domain DNS/MX...
That's all, i don't have an idea to how to transfert data server to server...
Thank you very much
