Default Installation of ubuntu

Just a questing regarding LVM... Reason I ask is the server I am installing it on has a Raid 1 array and for some reason with I choose LVM i loose alot of my HDD space (weird)... Whats are the real benefits for LVM?

Thank you for the reply... I looked into it...

I followed this Here and got everything to work perfectly... But regarding the mail server setup... what mail installation is it using and is there a way to access the mail page online? Before I used squirrelmail but this setup seems to be different.
