Default Web server how-to guides *without* any control panels?

Does anyone know of any good how-to guides that set up a web server without a control panel?

The usual lamp, plus email (postfix/dovcot or similar) and some tips on securing the server would be awesome.

Get ISPConfig support and the ISPConfig 3 manual from ispconfig.org.
