Just upgraded to 3.0.4.3 (Deb 6)- all stock settings as per guide, but just noticed that all phrased "£" symbols have been replaced with "£" globally across server/domains.
Databases etc are all okay (I haven’t changed anything since upgrade)- must be Apache2 / PHP, but I've had a good look around and can’t find anything wrong.... Any ideas where to start/what may have changed during the upgrade?

ISPConfig does not set any charsets for the websites in the vhosts, the charset is set in the apache2.conf file globally for all sites by the linux distribution. So maybe you installed a apache update from debian which changed something. I would start there to check which default charset is set.
