Default How to enable Apache/PHP support multiple languages?

I got a new server built at Serverbeach and I have done almost all the configuration but stuck with enabling apache to support multiple languages.

I am running CentOS 5 with Apache 2.2.8, PHP5.2.5 and MySQL5. Right now, Chinese characters on my webpages are not displayed correctly. I am wondering how to enable apache/php to support Chinese, Japanese and other languages.

I appreciate your reply.
