It seems that - when it was working - emails were sent to Matthew@example.org, but now emails are sent directly to example.org_matthew@ns1.tellip.info.

Yes the domain exists in /etc/postfix/local-hostnames and the recipient email address is listed in /etc/postfix/virtusertable.

to address is the same in both instances but there is no
orig_to=<email_address> now in the maillogs for the messages not being picked up by procmail?
Procmail is not invoked and the messages are sent to the relay_address where they get lost. As I mentioned I made absolutely no changes to the server - it just started happening
