Since ISPConfig 3.x is not compatible with 2.x, I wanted to remove my current 2.x install. I've searched around a bit, but haven't come across a compiled post or how-to that lists or describes what needs/should be uninstalled in order to install 3.x and have it work correctly.

Would it be better to blow away the server and install from a fresh server build?

Any help would be greatly appreciated.

Thanks,

To uninstall ISPConfig 2, run
/root/ispconfig/uninstall

You can then ty to installversion 3, but I'm not sure if it will work (if it does, please post back). The safest way would be to reinstall the server.
