Setup mail/smtp server

Here is a how to -The Perfect Setup - Ubuntu 6.06 LTS Server (Dapper Drake). MySQL,FTP,etc and only install Courier and Postfix as I do not want to use virutal users. If this is the case can I get details on which peices to install and order and any mods I need to make
