Perfect Setup Debian - Using mail

Hi,

I've followed through the perfect debian setup and got everything working on a local virtual computer,

I'm wondering how I actually setup new email addresses and use them?

Any help is appreciated, I don't think I understand this area very well which is why this question isn't worded as well as I would like it to be.
