Thanks for writing this tutorial!  I think you left out a couple packages in the "yum" command at the begining.  You need comipzconfig-settings-manager to see the CompizConfig settings manager on the System menu.  The menu item also appears under System->Preferences->Look and Feel.  I seem to be missing compiz-manager, even though I have the following packages installed:
